Hatam cuisine is the ethnic cuisine of Iran. We provide a wide variety of foods ranging from Kabobs (Filet Mignon, shish kabobs, Ground Beef skewers, chicken kabobs, Lamb kabobs), Khoresht (stew that is served with rice: Ghorme Sabzi, Gheimeh, Essendon, Eggplant stew [Bademjan]), Polo (white rice alone or with the addition of meat and vegetables and herbs: Loobia Polo, Albabloo Polo, Adas Polo etc.), and different soups, salads, pastries, and speciality drinks. Traditional Persian cooking is done in stages, sometimes needing hours of preparation and attention. The outcome is a well-balanced mixture of herbs, meat, beans, dairy products and vegetables. One of the oldest unique recipes is Khoresht-e-Fesenjon, a stew consisting of chicken breast meat in a rich pomegranate and walnut sauce that yields a distinctive brownish colour, most often served with white rice.
