Inspired by his unshakable love for real Birria and his desire to spread its flavours throughout California, Don Bonifacio Gonzales established his Birrieria in 1972. Today, we honour his memory with pride, keeping alive the spirit of Mexico and the cosy feel of home, all while adhering to Don's beloved maxim, "Me Dicen el Sabroso" ("They call me the Tasty One").
Since 1972, OUR ORIGINS are steeped in history
Don Bonifacio Gonzales, the originator, comes from Jalisco. His uncle gave him a family recipe for real Birria that has been passed down for over a century. He fulfilled his desire in 1972 when he opened the Birrieria Jalisco, which signalled the start of an incredibly traditional culinary adventure.
